Spark Recipes the other day while searching for a way to make use of the 35 or so bananas in my freezer without making banana bread (so delicious, but oh the calories!!)
This recipe has only slightly fewer calories than regular muffins, but has the dieters benefit of being almost completely fat free! You can even use a low-cal sweetener to make them an even more awesome diet food! If you're not a dieter, these muffins are still insanely delicious, so moist and scruptious!
Best Ever Banana Chocolate Chip Muffins (their title, not mine - though they are amazing)
3 large bananas
1/3 c. applesauce
3/4 c. white sugar
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. each of cinnamon and nutmeg (optional - but so good!)
Mini chocolate chips (optional)
Blend together bananas, applesauce, egg, and sugar until smooth. Add remaining ingredients (except chocolate chips) and blend until mixed well. Stir in chocolate chips if desired.
Spoon into greased muffing cups (you can use paper liners if you want, but the muffins will stick to them).
Makes approx. 42 mini muffins, 24 small muffins, or 12 regular sized muffins. (Isn't muffin just a cute word? or am i just crazy??)
Tip: Freeze ripe bananas (still in their peel), and thaw them out whenever you're ready to use them. Somehow freezing makes them extra powerful for a beautiful, strong banana flavor!
For regular size muffins: 160 calories, 0.75 fat, 33 carbs, 2.5 protien
for mini muffins (without chocolate): 41 calories, 0 fat, 10 carbs, 1 protien.
