Recipe Time: Amazing Herbed Chicken Nuggets!

I know I'm not on here a lot - one big reason why i'm not a super-popular blog. I'm okay with that. I post when I have time, and with three (almost four!) little ones at home, there's not a lot of that - too many other activities and priorities.

Anyway, i HAD to come on today and quickly share this recipe. I threw together a few recipes i found out in internet land, and came up with this. It doesn't make a ton, so if you have a hungry brood, you might have to double it.

Amazing Herbed Chicken Nuggets

4 large boneless, skinless chicken breasts, cubed

1 cup bread crumbs (i used half white, half wheat)
4 tsp. paprika
2 tsp. salt
1/3 tsp. garlic powder
1 tsp. each of the following:
  • ground black pepper
  • ground mustard
  • ground thyme
  • basil
  • oregano
  • ground ginger

 2 eggs, beaten
1/2 cup flour
salt and pepper

Mix bread crumbs and all spices into a dish. In separate dish, beat eggs until smooth. Place the flour in a third dish (or ziplock bag).

Salt and pepper chicken pieces to taste. Coat each piece in flour. Dip in egg wash, then in bread crumb mixture - make sure they're completely covered with a thick layer of crumbs. Bake in the oven or fry in oil until chicken is cooked through.

I fried mine in a pan with about half inch of vegetable oil in the bottom, over medium heat.  It took about three or four minutes on each side, and the pieces came out juicy and delicious! Set aside on a cooling rack or on paper towels for several minutes until cool enough to eat. I like using the cooling rack with some paper towels underneath to catch drips. It helps stop the pieces from "sweating" and keeps them nice and crispy!

For baking, i would suggest 400 degrees for about 10-12 minutes, or until the chicken is cooked through, but i didn't do it this way, so check occasionally just to be sure.
